Western Recipes

Jalapeņo Apple Cobbler

Ready In: 50 minutes

Serves: 8 (1 - 9" skillet)

 

INGREDIENTS - Apple Mixture

2 Tbsp.

Lemon juice

3 lb.

Granny smith apples, peeled and sliced

1 lb.

Sugar

2 Tbsp.

Flour

3/4 tsp.

Cinnamon

4 Tbsp.

Red jalapeno jelly

1 Tbsp.

Arrowroot or cornstarch

INGREDIENTS - Biscuit Topping

 

1 1/3 cups

Flour

 

1/4 cup

Sugar

 

2 tsp.

Baking powder

 

1/4 tsp.

Salt

 

1/3 cup

Butter, chilled

 

1/3 cup

Milk

 

1

Egg, slightly beaten

PREPARATION

Combine lemon juice, apples, cinnamon and sugar in a large pot and heat until gently boiling. Add in flour and arrowroot or cornstarch until mixture is thickened. Stir in jelly.  Let cool. In mixer bowl, combine dry ingredients for biscuit topping. On low speed, beat in butter until crumbly. Combine milk and egg in a separate bowl and gradually beat into flour mixture until moistened and batter is soft. Evenly space sparse drops of biscuit over cooled apple mixture in skillet sprayed with cooking oil.

 

Bake at 350 degrees for approximately 15 minutes or until the biscuits are browned.  

 

Serve with whipped cream or ice cream.
